Puri is a type of flatbread that is deep fried rather than baked or grilled—it’s served with a number of savory dishes and is most frequently enjoyed at breakfast time. These crispy snacks are also made from fried dough, though their texture is closer to that of a chip than a chewy bread. They’re in the same family as papadams or papads, which are a mainstay in South Asian restaurants across America, and served as appetizers with chutneys. This papdi is flavored with a rich blend of cumin and carom (a flavorful seed similar to cumin or caraway).
