Mr. Ito’s Yaki Choko Taruto are an example of Japanese yōgashi – Western-style candy or baked goods made with butter or chocolate (traditional wagashi is usually made with adzuki beans, rice flour or fruit.) Believe it or not, chocolate wasn’t initially very popular in Japan! But yōgashi really caught on in the 20th century – such as these buttery shortcrust tarts. Crumbly pastry with a layer of rich salted caramel – what’s not to love?
