The word “Nimco” comes from the Urdu word “Namkeen,” which means “salty.” The word for salt is “namak.” Over time, nimco became a shorthand for a crispy, savory snack that’s been fried and seasoned with fragrant spices. Early versions of nimco were made from fried lentils, now wheat, corn, beans, and potato versions have become popular over time. These chips are made from crispy fried potatoes and flavored with a hefty dose of black pepper and other spices. Black pepper is one of the oldest spices that’s harvested in Pakistan; it’s been grown in the region for thousands of years (dating all the way back to the Indus Valley civilization). Some have even called it the “king of spices.” Local Pakistanis, quite often, keep nimco in glass bowls in their kitchen and living room, for everyone to snack on, especially during winter, when such snacks are thought to warm you up.
