Brazilian Chicken Stroganoff (Estrogonofe de Frango)

Originally inspired by a Russian dish, Brazil made it its own with cream, tomato, ketchup, and mustard, turning it into one of the most beloved home-cooked meals in the country.
Brazilian stroganoff is creamy, slightly tangy, and is served with rice and potato sticks.
Prep Time: 10 minutes for white rice 2 minutes
Cook Time: 20-25 minutes for white rice - 15-18 minutes
Servings: 4 people
Ingredients
- 500g (1 lb) chicken breast, cut into cubes or strips
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter or oil
- Salt & black pepper
- 1/2 cup tomato sauce
- 3 tbsp ketchup
- 1 tbsp mustard
- 1 cup heavy cream (or table cream)
Optional: 100g mushrooms (very common)
White rice:
- 1 cup rice
- 2 cups water
- 1 clove garlic
- 1 tbsp oil
- Salt
Preparation
- Heat butter/oil, sauté onion until soft.
- Add garlic, then chicken.
- Season with salt & pepper.
- Cook until chicken is golden and cooked through.
- Add tomato sauce, ketchup, mustard. Mix well.
- Simmer 5 minutes.
- Lower heat, add cream.
- Mix gently and heat without boiling.
- Taste and adjust salt
White rice:
- Sauté garlic in oil.
- Add rice, stir for 30 seconds.
- Add water + salt.
- Cook uncovered until water evaporates.
- Cover and let steam 5 minutes.
