  • 2 tbsp sugar
  • 1/4 tsp baking soda
  • A small handful of nuts (optional)


  1. Place the nuts on a baking sheet lined with parchment paper.
  2. Place the sugar in the center of a small pan over low heat (a mini single-egg pan is amazing for this).
  3. As the sugar starts to melt, stir it gently so it doesn't burn. Continue to cook until the sugar is completely liquid.
  4. Add the baking soda and continue stirring. The color will quickly turn beige and the sugar will expand.
  5. As soon as the baking soda is incorporated, carefully drop the cookie on top of the nuts.
  6. Allow to fully cool for 10 minutes. It will be very hot, so do not touch!
  7. Enjoy!
