Dan Bing (蛋餅)

Ingredients

  • 1 cup all-purpose flour
  • ½ cup water
  • 2 eggs
  • 2 tbsp chopped scallions
  • ½ tsp salt
  • 1 tbsp oil for frying
  • Sweet soy sauce (for serving)

Preparation

  1. Make the batter by whisking flour, water, and salt until smooth.
  2. Cook the dan bing: Heat oil in a pan, pour in a thin layer of batter, and crack an egg on
    top, spreading it evenly. Sprinkle scallions over the egg.
  3. Flip and cook until golden, then roll up and slice into bite-sized pieces.
  4. Drizzle with sweet soy sauce before serving.
