Ingredients
- 1 cup all-purpose flour
- ½ cup water
- 2 eggs
- 2 tbsp chopped scallions
- ½ tsp salt
- 1 tbsp oil for frying
- Sweet soy sauce (for serving)
Preparation
- Make the batter by whisking flour, water, and salt until smooth.
- Cook the dan bing: Heat oil in a pan, pour in a thin layer of batter, and crack an egg on
top, spreading it evenly. Sprinkle scallions over the egg. - Flip and cook until golden, then roll up and slice into bite-sized pieces.
- Drizzle with sweet soy sauce before serving.
