Potato & Farmer’s Cheese Pierogi

Pierogi are one of the most recognizable Polish comfort foods with simple ingredients, made by hand, and meant to be forgiving.

Prep Time: 45 minutes (plus resting)

Cook Time: 10-15 minutes

Servings: 4-6 people

Ingredients

Dough

● 1 large egg

● 2 tbsp sour cream

● 2 cups all-purpose flour

● ½–¾ cup warm milk (added gradually)

● 2 tbsp melted butter

● Large pinch of salt

Filling

● 10 small gold potatoes, skin on

● 1 medium onion, finely diced

● Butter or oil, for frying

● Salt and pepper

● ¾–1 cup farmer’s cheese

For Serving (optional)

● Fried onions

● Crumbled bacon

● Sour cream

● Fresh herbs

Preparation

Make the Dough

  1. Mix egg, sour cream, butter, milk, and salt.
  2. Add flour until a shaggy dough forms.
  3. Knead 5–7 minutes until smooth and elastic.
  4. Cover and rest at least 30 minutes.

Prepare the Filling

  1. Boil potatoes until fork tender; drain, peel, and mash well.
  2. Sauté onion until soft and lightly golden.
  3. Mix potatoes, onion, salt, pepper, and farmer’s cheese until creamy but firm.

Assemble & Cook

  1. Roll dough thin (about credit card thickness).
  2. Cut circles, fill with ~1 tbsp filling, seal with finger and then press with fork.
  3. Boil until they float, then cook 30 seconds longer.
  4. Serve as is or pan fry in butter for a bit of crunch.

Tips To Use

● Resist the urge to add more milk to the dough. Once the dough holds together when

squeezed, start kneading.

● Mash potatoes very smooth to help sealing.

● Freeze extras flat, then store.
