Stoemp
Stoemp is a hearty and comforting dish made from mashed potatoes mixed with seasonal vegetables like carrots, leeks, or spinach. Often enjoyed with a side of vegetarian sausage or simply on its own, stoemp is a nostalgic favorite that highlights the flavors of Belgian home cooking.

Ingredients
- 1.5 lbs (700g) potatoes (peeled and cubed)
- 3 large carrots (peeled and chopped)
- 1 leek (thinly sliced)
- 1 onion (finely chopped)
- 1 garlic clove (minced)
- (Above vegetable is optional, always use your favorite vegetable ingrediant)
- 3 tbsp butter
- 1/2 cup (120ml) milk
- 1/4 cup (60ml) cream (optional, for extra creaminess)
- Salt and pepper, to taste
- 1/2 tsp ground nutmeg (My secret seasoning!)
- Fresh parsley (chopped, for garnish)
Preparation
- Cook the Vegetables: In a large pot, boil the potatoes and carrots in salted water until tender, about 15-20 minutes. Drain and set aside.
- Sauté the Leek and Onion: In a pan, melt 2 tbsp of butter over medium heat. Add the chopped onion, garlic, and leek. Sauté until softened and fragrant, about 5-7 minutes.
- Mash: Mash the potatoes and carrots together in the pot. Add the remaining 1 tbsp butter, milk, and cream (if using). Stir until smooth and creamy.
- Add Seasoning: Stir in the sautéed leek, onion, and garlic. Add salt, pepper, and nutmeg for that extra special flavor.
- Serve: Garnish with fresh parsley and serve alongside sausages, grilled meats, or enjoy it as a cozy meal on its own!
